Candied Orange or Grapefruit Peel

Candied orange peel, shot in Syracuse, Sicily....




6 Orange or 3 Grapefruit Shells, cut into ¼” Strips

1 Tsp. Salt (can leave out)

3 C. Sugar

1 C. Water

  1. Sprinkle salt over rind and cover with water.
  2. Boil 15 minutes, pour off water and repeat 2 more times.
  3. Drain and cover with sugar, 1 C. water, and simmer stirring occasionally until remaining syrup has boiled off.

Spread on waxed paper and roll each piece of candied fruit in remaining sugar.
